Growing up on the island, Saturday mornings were one of my favourite times of the week.
We would plan out our rock harvesting days ahead—The intent was always to "get the larger ones".
Skipping over sharp rocks, looking out for the ones covered in seaweed (Slippery when wet) we would find our perfect spot.
Low tide.
No wake (waves).
We were in the curb digging business!
Etched Deep in the rock you would find the curbs nestled tight, and with our sharp edged knives we would dig them from their space.
Curbs are a delacies for many islanders . There unique flavor can be well complimented with vegetables such as , Red Onions, Tomatoes, Colored Peppers, Cucumbers, Lemon, Limes and Hot Peppers to taste.
Your taste buds will leave you craving for more .
The next time you visit a "Conch Stand" be sure to ask for a Curb Salad.
